Candied almonds or any other candied nuts are a sweet snack. The nuts are slowly baked with a sugar coating until the exterior is hard and crunchy. Spices and other flavours can be added as well.
This recipe infuses masala chai flavours by adding spices you would find in a chai blend to the sugar mixture. It also uses a bit of chai concentrate for the liquid mixture.
They are crunchy, toasty and sweet with extra warmth thanks to the spiced tea.
These candied almonds should not be confused with Jordan Almonds.

- Sugar: White granulated sugar
- Salt + Ground Spices: Cinnamon, ginger and cloves
- Egg White: There are no substitutions for this ingredient as it is responsible for making sure the spiced sugar mixture sticks to the almonds. Without egg whites, the almonds may get soggy after just a few days.
- Chai Concentrate: Store-bought or homemade chai concentrate
- Almonds: Raw and unsalted almonds (whole only, not chopped)
Chai Spiced Candied Almonds Recipe

Preheat the oven to 250 degrees fahrenheit. Line a baking sheet with parchment paper and set aside.
In a small mixing bowl, combine granulated sugar, ground cinnamon, ginger, cloves and salt.
In a separate small mixing bowl, whisk the egg white and chai concentrate until frothy. Add almonds to the bowl and stir until they are coated.
Add the sugar and spice mixture to the bowl of almonds and toss until coated again. Spread the almonds evenly on the lined baking sheet.
Bake in the preheated oven for 60 minutes, stirring the almonds every 15 minutes to help them bake evenly and prevent them from sticking to one another.
Cool the chai candied almonds before serving or storing. They can be stored in an airtight container or bag for 3 weeks.

Can I use other nuts?
Yes! You can try this recipe with walnuts and pecans. You can also use a mixture of both as well as almonds if you want a blend of Chai Spiced Candied Nuts.
Why are my almonds very sticky?
Candied nuts need to be cooked long enough to have the crunchy exterior. If the glaze on your almonds are still sticky then they should be left in the oven a bit longer. Make sure you have the right temperature set on your oven, too.
Can I use chopped almonds/nuts?
I do not recommend using chopped almonds or any chopped nuts for this recipe. Whole almonds should be used as chopped almonds will burn easily during the baking process.
How do I keep the chai spiced candied almonds from sticking?
Spread the almonds on a large baking sheet, making sure there is space between them and none overlapping. Also, don’t forget to toss the almonds every 15 minutes during baking.
